Smoked Beef Sausage & Potato Chowder

Smoked Beef Sausage & Potato Chowder

Makes 4 servings


1 pound fully-cooked smoked beef sausage, thinly sliced1 package (5 ounces) cheesy scalloped potatoes2 cups frozen mixed vegetables1 can (14-1/2 ounces) ready-to-serve onion-flavored beef broth1 cup water2 cups milk2 tablespoons chopped fresh parsley1/4 teaspoon black pepperFresh parsley sprigs


  1. HeatĀ stockpot over medium-high heat until hot. Add sausage; cook and stir 5 minutes or until browned. Pour off drippings.
  2. Add potatoes from package, mixed vegetables, broth and water; bring to a boil. Reduce heat; whisk in sauce mix until blended. Cover and simmer over low heat 12 minutes or until potatoes are tender, stirring occasionally.
  3. Stir in milk; cook, uncovered, over medium heat 1 minute or just until heated through. (Do not boil.) Remove from heat; stir in chopped parsley and pepper. Garnish with parsley sprigs.
Nutrition information per serving: 56 calories; 37 g fat; 77 mg cholesterol; 1981 mg sodium; 45 g carbohydrate; 23 g protein; 6.2 mg niacin; 0.2 mg vitamin B6; 2.4 mcg vitamin B12; 1.6 mg iron; 3.7 mg zinc.This recipe is an excellent source of protein, niacin, vitamin B12 and zinc; and a good source of vitamin B6.
