Beef Stroganoff Nuevo

Makes 4 servings
Ingredients1 pound Ground Beef (95% lean)8 ounces uncooked linguine, broken in half1 small red onion1 container (8 ounces) fat-free sour cream 3/4 cup salsa verde4 cups fresh baby spinach leaves2 small plum tomatoes, sliced1 avocado, sliced1/4 cup chopped fresh cilantro leaves
- Cook pasta according to package directions; drain. Set aside.
- Meanwhile, cut 1/4 of onion into thin slices; set aside. Chop remaining onion. Heat large nonstick skillet over medium heat until hot; brown Ground Beef with chopped onion 8 to 10 minutes, breaking beef up into 3/4-inch crumbles. Remove drippings.
- Stir in sour cream, salsa and cooked pasta. Reduce heat; simmer 5 minutes or until heated through.
- Divide spinach evenly among four plates. Spoon beef mixture over spinach. Top with tomatoes, avocado, sliced onion and cilantro.
