Zesty Beef & Bean Wedges

Makes 4 servings


1 pound ground round1 can (15 to 16 ounces) chili hot beans, drained1 cup Southwestern-flavored cornbread stuffing mix1 tablespoon fresh lime juice1/8 teaspoon pepper4 ounces jalapeño pepper cheese, shredded (1 cup)1/4 cup sliced green onionsLime wedges (optional)


  1. Heat oven to 375°F. Combine ground beef, beans, stuffing mix, lime juice and pepper in large bowl, mixing lightly but thoroughly. Spread mixture evenly in 12-inch pizza pan.
  2. Bake in 375°F oven 15 minutes. Sprinkle with cheese; continue baking 2 to 3 minutes or until cheese is melted. Sprinkle with green onions; cut into 8 wedges. Garnish with lime wedges, if desired.


Cooking times are for fresh or thoroughly thawed ground beef. Ground beef should be cooked to an internal temperature of 160ºF. Color is not a reliable indicator of ground beef doneness. Cook's Tip:  For milder flavor, substitute mild or medium-hot chili beans for chili hot beans. Recipe may be prepared in a 13 x 9-inch baking pan. Cut into 8 rectangles to serve.
